Bruschetta with Olives


Hey all!


I have been loving eating bruschetta the passed few years but unfortunately, I discovered that one of the main ingredients, avocado, is related to one of my food intolerances. After cutting it out and introducing it several times my body doesn't seem to work, ever.


During the summer, my partner and I love to be able to have bruschetta and because I found this out I have experimented with a few alternatives and for those that can't have avocado, this is a great way to eat bruschetta on a warm summer day!


Vegan | Dairy Free | Gluten Free | Egg Free | Soy Free | Nut & Seed Free


What Will You Need? Serving Size: 4 people


  • 1 Red Onion : antioxidant, boosts immune system important for fighting inflammation and bacteria (Web MD n.d.)

  • 2 Cups of Pitted Kalamata Olives : fibre, calcium, vitamin A, vitamin C, & vitamin K (Green City Times 2018)

  • 6 Medium size tomatoes : Vitamin c, potassium, folate, and vitamin K (Bjarnadottir 2019).

  • 1/3 cup of coriander (cilantro): may lower blood sugar, benefit heart & bone health, antioxidant, and fight infections (Panoff 2019).

  • 1 tsp Salt

  • 2 tsp Pepper

  • 5 TBSP Olive Oil

  • GF Corn Chips

  • Bowl


Recipe:


  1. Dice up 1 whole red onion & pour into bowl

  2. Dice up all tomatoes & pour into bowl

  3. Cut the olives in half & pour into bowl

  4. Chop up the coriander & pour into bowl

  5. Pour olive oil over entire mixture

  6. Add salt & pepper to entire mixture

  7. Combine all
